Blend cinnamon, applesauce, and glue in mixing bowl; knead mixture for several minutes until dough is smooth. Moisten hands with water if dough is too dry. Place dough on waxed paper; roll to 1/4 inch thickness. Use cookie cutter to cut out desired shapes. Poke hanger holes with skewer, if desired.
